Baked Spaghetti Eggs

Just got done moving into a new house this weekend. This was the last thing we cooked in our old house. It doesn’t look like much, but it was great. We took leftover spaghetti and poured 4 scrambled eggs and a little milk over it, then topped it with steamed cauliflower and cheese. Baked it for about a half hour or so. The result is somewhat like quiche. A great way to use up leftover spaghetti.

Asian Dinner

OK The other night we made a great asian dinner. The main dish was the homemade soup. In it was tofu, tomatoes, water chesnuts, snow peas, carrots, cilantro, onions, and ramen noodles. And over there on the side was green onion pancakes, eggrolls, and chow mein (I didn’t really like that). Tasty supper, with lots of leftover soup.

Pizza Vito

Alright, a real pizza post. Pizza Vito is the newest chain of pizza places to open up here in town. I’ve been there 2 or 3 times now and I really enjoy it. This time I went and I wanted to try out the stromboli. This one had spinach, mushrooms, feta, and mozzarella. It was only ok. The pizza here is much better. This was a slice of the white pie and I thought it was really good. Their standard cheese slice is what I first had to try them out, and that was awesome. I will definitely be going back there when I am on that side of town. 
Chili Dogs

For dinner last night, we made chili veggie dogs. Loaded with black bean chili, cheese, and tomatoes. And keeping with the cleaning out the freezer theme, we had french fries and pizza rolls on the side.

Juevos Rancheros Salad

Just got done eating this one. What a great idea this was. You take the classic dish which is over easy eggs, cheese, salsa, black beans, rice and avocado and put it on top of lettuce, tomatoes, and guacamole as the dressing. Then when you dig in, the yolks run together with the guacamole coating everything, and you have a great salad. We will definitely be making this again.

Last nights dinner was kind of random and thrown together. See, we will be moving at the end of the month so its time to start cleaning out the cabinets and the freezer. I had a small salad with ranch and bacos, black beans and rice (we used the leftovers tonight for the salad above), veggie buffalo wings, and cheese bread sticks from wal-mart. Good eats.

Well ’rounded’ Dinner

I hadn’t noticed until just now that everything we had to eat was circular in shape. We had some box potatoes that were mixed with veggie sausage crumbles, roasted onions, and of course brussel sprouts. Pretty much a dinner of side dishes.. but very delicious ones.

Leftover Spaghetti

We took some spaghetti that we had leftover from the night before and turned it into a good dinner just by adding some more vegetables and sauce. Asparagus, peppers, onions, tomatoes, and we also had some peel and eat shrimp on the side.

Looks like Thansgiving in March

For dinner we made a breaded fake chicken breast, smashed parsnips, homemade chunky gravy, roasted golden beets, brussel sprouts with peas and corn, and rye toast. It weirdly looked like a thanksgiving dinner, and we didn’t do that on purpose.
